Parsley…Like It’s Lettuce

Every few weeks…
I’ll buy a huge bunch of curly parsley and challenge myself to use it before even a sprig wilts.
My favorite ways to enjoy this ~oh so good~ for you little herb are chopped salads…
using generous helpings of vibrant parsley as the main green.
Adding it to fresh juice gives it a green kick full of goodness….
try it in Brown Rice or Quinoa…giving it a pretty green hue.
A must in potato salads as well as tomato sauces….
It’s rather unassuming though….being tossed away on restaurant plates for decades…
I consider it a multi-tasker serving as both the garnish and breath freshener =}
